This is my second recipe for the Bake for the Cure for today! This is a easy and low fat fall favorite recipe of mine! This cake is moist and so tasty!

Low Fat Spice Cake
Cooking Spray
1 cup flour
1/4 cup cornstarch
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/3 teaspoon nutmeg
1 cup sugar
2/3 cup skim milk
1 teaspoon vanilla
2 egg whites
1/3 cup Karo dark corn syrup
Frosting
Add any frosting you would like. I used Whipped Cream Cheese frosting that was delicious with this cake.
Directions: Combine flour, cornstarch, baking powder, salt, cinnamon, ginger, and nutmeg in a large bowl.
Combine in another bowl: sugar and milk. Mix these together until the sugar is almost dissolved. Add egg whites, corn syrup, and vanilla. Blend them all together.
Gradually add to the flour mixture. Stir until smooth.
Pour into 9 by 9 inch or 9 inch round prepared baking pan. Make sure you use cooking spray.
Bake at 350
Cook for 30 minutes or until a toothpick inserted in center comes out clean.
Cool in pan on a wired rack.

ReplyDeleteI am going to fix this for dessert tomorrow night. Bake for a cure for Breast Cancer is very dear to my heart because I lost my sister to this cancer. She loved cooking and trying new recipes, cooking for others was her way of showing love to family and friends alike.
